Banana Bread

What do you do with those overly ripe bananas? If you have a couple of bananas that are showing up with dark spots and are softening so that no one wants to eat them, do you just throw them out? No. You bake some banana bread. Here's how you do it.

Ingredients

Bananas
Sifted all-purpose flour, 1-3/4 cups
Baking powder, 2 teaspoons
Soda, 1/4 teaspoon,
Salt, 1/2 teaspoon
Water, 1 cup and 2 tablespoons
Shortening, 1/3 cup
Sugar, 2/3 cup
Eggs, 2 ea

Instruction

Peel and mash bananas in a bowl with fork or potato masher.
Work shortening in a mixing bowl until cream.
Beat eggs one at a time and add one at a time to shortening.
Beat hard after each egg is added.
Stir dry ingredients and bananas alternatively into mixing bowl.
Pour batter into 5x10 bread pan.
Bake 1 hour 10 minutes at 350 degrees.
