Mincemeat Cake

In my grandmother Rogers recipe box, there are a number of recipes on ruled 3X5 cards. This recipe was ascribed to 'P. Smith'. On the reverse side of the card, 'Margie', my grandmother, was written. I suspect that these 3X5 card recipes were shared at grandmother's church circle or a similar ladies group, which would explain the card's uniformity.

Ingredients

Shortening, 1/2 cup
Sugar, 1-1/3 cups
Eggs, 2 ea
Mincemeat, 1 cup
Cake Flour, 2 cups
Cocoa, 1-1/2 tablespoons
Baking powder, 2 teaspoons
Salt, 1/2 teaspoon
Milk, 1/2 cup
Chopped nuts, 1/3 cup

Instructions

Cream sugar and shortening.
Add eggs, one at a time, beating well.
Add heated mincemeat.
Sift dry ingredients together, add alternatively with milk.
Last, stir in nut meats.
Bake in layers and put together with fudge filling.

Comment

The recipe's surprise is the filling. Actually, any icing will do, with chocolate flavor being my preference. I imagine that this would make a standard size round cake.
